Survey indicates only half of Irish workers are taking full holidays
Just 56% of professionals working in Ireland took their full holiday entitlements last year, according to a new survey.
The global survey carried out by recruitment consultancy firm Robert Walters also shows that 6% of workers in Ireland took only a quarter of their hoiday days. Ireland had the highest percentage of respondents who used up their full holiday allocation,
followed by New Zealand with 55%.

Stena Line to introduce spa facilities
Stena Line has announced that its two new Superfast vessels, which will be introduced on the company’s new Cairnryan to Belfast route in November, will have a Nordic Spa on board to offer passengers a totally unique travel experience. When complete the ships will be the first on the Irish Sea to offer passengers the opportunity to relax and indulge in a Pure Nordic Spa during the 2 hour, 15 minute crossing.

Ryanair threaten vote over "Aer Lingus" gate
Ryanair has threatened to call a shareholders' vote if Aer Lingus does not release the consultant's report into the controversial "leave-and-rehire" scheme that saw the former national airline forced to pay €30m to settle a Revenue bill incurred when it re-employed staff that it had taken off its books.

Apple and plum crumble
Prep time: 25 min
Cook time: 40 min
Serves:6-8
For the filling
675 g Bramley apples, peeled, cored and thickly sliced
675 g Cox'sapples, peeled, cored and thickly sliced
12 plums, stones removed, quartered
25 g lightmuscovado sugar
1 tsp ground cinnamon
2 tbsp water
For the crumble
280 g self-raising flour
140 g butter, plus extra for greasing
140 g demerara sugar
70 g porridge oats
1. Preheat the oven to 180C/gas 4 and grease a 28 x 20 x 5cm baking dish with butter.
2. For the filling: put the apples and plums in the baking dish. Sprinkle over the sugar, cinnamon and water and toss together. Bake for about 10 minutes, until the fruits soften and their juices run. Remove the baking dish from the oven and increase the oven temperature to 200C/gas 6.
3. For the crumble: put the flour, butter and sugar in a food processor and blitz to combine. Remove the bowl from the processor and stir in the oats by hand as they need to remain coarse.
4. Sprinkle the crumble mixture over the fruit and bake for about 30 minutes, or until golden brown. Serve with cream, ice cream or custard.
