Burren To Host International Sustainable Tourism Conference
Details have been announced of a major international conference in County Clare focusing on sustainable destination development. The theme of the conference is how to work with stakeholder partners in balancing conservation and tourism. The Burren & Cliffs of Moher Geopark LIFE programme will host the conference at Falls Hotel & Spa in Ennistymon on 17-18 October, 2013.

Keep Low VAT Rate To Maintain Tourism Boost Says TD
CSO figures published recently show a 6.5% rise in overseas visits to Ireland for the first eight months of 2013. The figures on overseas travel indicate that all four main overseas markets are showing positive growth, and Ireland is set to surpass the Gathering target of attracting an additional 325,000 visitors this year. At more than 4.75 million visits, overall trips to Ireland were up 6.5% in the first eight months of 2013 compared to the same period in 2012.

Cork Airport Ranked First For Customer Satisfaction In Global Passenger Survey
Cork Airport has placed first for overall customer satisfaction in a respected global survey of passengers. Cork Airport saw off all contenders in the latest Airport Service Quality (ASQ) Regional survey, which is carried out globally on behalf of Airports Council International (ACI). The passenger survey, which was undertaken in the summer, measured customer satisfaction across eight categories in 61 regional airports worldwide. Cork Airport scored highest of all the airports, and was ranked as the world’s best regional airport for customer service by both business and leisure travellers

Spiced Roasted Apple & Blackberry

Ingredients Serves: 4

4 medium Bramley apples, each weighing about 200g/8oz
4 tbsp clear honey
½ tsp ground cinnamon
finely grated zest and juice of 1 large orange
250g blackberries

Preparation method
Prep: 10 mins | Cook: 50 mins
1.Preheat the oven to 180C/gas 4/fan 160C. Core the apples so you have a hole the size of a pound coin in each one. Make a cut just into the skin around the middle of each apple.
2.Stand the apples in a shallow baking dish large enough to take all four. Mix together the honey, cinnamon and orange zest, put an equal amount into the cavity of each apple, then pour the orange juice into the dish
3.Roast the apples for about 40 minutes, spooning the juices over them occasionally. Then, when the apples are almost ready, spoon the blackberries around and over the top of each apple. Return to the oven for 10 minutes or until the juices start to run. Spoon the blackberries and juices over the apples to serve.
