Titanic Belfast Beats Eiffel Tower To ‘Best Tourist Attraction’ Spot
Titanic Belfast has fended off one of the most iconic buildings in Europe to be named the continent's best visitor attraction. The 300m Eiffel Tower may have breathtaking views of Paris, bit it was Northern Ireland's top tourist spot which won over judges at a major travel awards event in Berlin.

Cashel Launches Voucher Scheme
Minister of State Tom Hayes TD launched the Cashel Loyalty Initiative in the Hall of the Vicars Choral, on the Rock of Cashel last Friday. The scheme is aimed at encouraging more people to visit the town of Cashel and benefitting small local businesses. The voucher scheme means that if you spend €15 in the town of Cashel, you receive free access to the Rock. The idea is the brainchild of Sean Laffey, of Cashel Chamber of Commerce, who in conjunction with the OPW, aims to encourage independent tourists to visit, spend some time and hopefully money and thus benefit businesses and jobs in the town

In the period November 2014 - January 2015, the total number of trips to Ireland increased by 9.1% to 1,474,000 - an overall increase of 123,200 compared to the same period twelve months earlier. The following table shows trips made to Ireland between November 2014 - January 2015, compared with the same period the previous year and indicates where the visitors came from.

Flybe To Launch New Cork-Cardiff Route
Cork Airport has welcomed the announcement that Flybe has launched a new twice weekly all year round route from Cork to Cardiff. Commencing on June 6, 2015, on Tuesday and Saturday, the 118 seat Embraer 195 aircraft will be operated by Flybe, Europe's largest regional airline and a new carrier to Cork

Dublin Airport Welcomes New Service To Geneva
The new Geneva service, which will begin on June 26, will operate four times per week. SWISS also operates a year-round service from Dublin to Zurich with up to nine flights per week during the peak summer season. All SWISS flights from Dublin are operated with an A320 aircraft offering around 150 seats.

Bus Éireann To Cut Cork Service
Bus Éireann have deferred plans to reduce its Cork services to mid-June 2015, following the completion of a report by a National Transport Authority (NTA) working group. The current proposed changes include the removal of all services from Cork to Carrick–on–Suir on Route 7, cutting out stops at Parnell Place, Fermoy and Mitchelstown

Leek, Potato & Bacon Bake

Serves 8
600ml chicken or vegetable stock
1kg potatoes, thinly sliced
6 leeks, thinly sliced into rounds
25g butter
3-4 rashers streaky bacon, snipped
3 tbsp double cream (optional)

Method
Heat oven to 200C/fan 180C/gas 6. Put the stock in a large pan, bring to the boil, then add the potatoes and the leeks. Bring back to the boil for 5 mins, then drain well, reserving the stock in a jug. Meanwhile, butter a large baking dish. Layer up the potatoes and leeks higgledypiggledy, seasoning as you go, then scatter the bacon over the top. Season well, pour over 200ml of the reserved stock, then spoon over the cream (if using) and cover with foil. Can be made up to 1 day ahead and chilled. Bake for 40 mins, uncovering halfway through so that the bacon crisps.
