Walkway And Cycle Path Officially Opened
An urban walkway and cycle path along a section of the River Suir in Clonmel was officially opened on Monday. The walking and cycling path extends from the Convent Bridge to the Old Bridge at Green Lane and from the Gashouse Bridge to the Galloping Field.

Dublin Airport New Route
Cyprus-based airline Cobalt has launched a new twice weekly direct scheduled service from Dublin Airport to Larnaca. The new route will operate on Wednesdays and Saturdays from July 9 until September 3.

Ireland West Airport New Route
Tour Operators Falcon and Thomson, part of the TUI Group, launched the inaugural flight on their new Costa Dorada service direct from Ireland West Airport Knock on 28th June 2016. With a weekly flight every Tuesday until the 16th of August, holidaymakers throughout the West of Ireland have the opportunity to discover the ‘Golden Coast’ from their local airport. Costa Dorada is home to the popular resorts of Salou, La Pineda and Cambrils while also on the doorstep of Barcelona.

Ryanair Launches New Routes At Shannon Airport
Ryanair have launched its winter schedule for Shannon Airport - which will see a number of new routes and services come into effect later this year. As part of the launch, the low-cost airline are selling 100,000 seats for just €19.99 across their European network - but they are only available until Monday, July 4.

Baked Pears with Gingerbread and Cream

Small knob butter
4 large pears (firm but ripe)
300ml (1/2 pint) cream
50g (2 oz) caster sugar
2 drops vanilla extract
Pinch ground cinnamon
Pinch ground nutmeg
1 tsp freshly grated root ginger
4 slices gingerbread (crumbled)

Method
Preheat the oven to 190°C (375°F/Gas 5). Lightly butter a large, shallow baking dish. Peel the pears and cut in half lengthways, then carefully remove the cores. Arrange in the buttered dish, cut side down in a single layer.
Place the cream in a bowl with the sugar, vanilla, cinnamon, nutmeg and root ginger, then mix until well combined. Pour over the pears and then bake for 20 minutes until the pears are almost tender and the cream mixture is well reduced.
Remove the pears form the oven and sprinkle the crumbled gingerbread on top. Bake for another 5 minutes until well heated through. The pears should now be completely tender and the cream thick and bubbly. Leave to cool slightly before serving straight to the table.
