Ryanair unveiled plans for a second independent terminal (T2) at Dublin Airport. At a cost of €114 million. Should the plans get the go-ahead it could more than double passenger numbers delivered at Dublin Airport, adding over 3 million visitors per annum to Irish tourism and its economy.

John O'Donoghue TD, Minister for Arts, Sport and Tourism, announced the appointment of Mr Shaun Quinn as Chief Executive Officer Designate of the new National Tourism Development Authority, Fáilte Ireland, which will replace Bord Fáilte and CERT.
Fáilte Ireland is to promote Tourism internally along with product development, training etc., while Tourism Ireland Ltd is to promote Ireland internationally.

According to the Office of the Director of Telecommunications Regulation (ODTR) who conducted a survey on Broadband in Ireland indicated that a large number of Irish adults have little or no interest in subscribing to broadband services.

4) Follow Up:

Pennies from Heaven have raised over €7 million from their fundraising efforts during the changeover to the euro. Old monies were donated as well as foreign currency. Bizarre items from paper clips and false teeth were also dropped into the collection drums. Up to 11 charities will benefit from the money raised. Well done to the organisers and everyone who donated to such a good cause.

5) Christmas Recipe:
------------------------------

Light Christmas Fruit Cake

1/2 pound Butter or Margarine
1 cup White Sugar
3 Eggs, separated into whites and yolks
1 tsp Baking Powder
2 3/4 cups Pastry Flour
1 cup heated Pineapple Juice
2 tsp Vanilla Extract
2 cups Golden Raisins
1 1/2 cups Red Glazed Cherries
1 1/2 cups Green Glazed Cherries
1 cup Mixed Peel
2 cups Brazil Nuts (or your favourite nut)

Cream together the butter and sugar. Add the egg yolks, extract and add pineapple juice and mix well. In a separate bowl, combine the fruit and 1/2 of the flour. Add the remaining flour and baking powder to the fruit. Mix the two mixtures together. Add 3 stiffly beaten egg whites. Bake for 1 hour at 350 F and another hour at 300 F. To keep the cake moist, add a pan of water to the oven while baking.
