Top tips for a stress free Christmas
We all know how the festive season can leave us feeling drained. Here are some tips to help you survive Christmas & see the New Year in without too much stress.

  • Get organised: Writing a list of the jobs that need to be done will help you take on one job at a time plus give you peace of mind knowing that they are done.

  • Secret Santa: Limit the stress of Christmas shopping. The idea is that a group of Participants' names are placed in a hat, and each person draws one name for whom they are to buy a gift. A price range can be agreed upon or even a wish list for each participant, to retain a certain element of surprise. Perfect for those of us who have large families to buy for.

  • Take a break: Give yourself half hour breaks. Decide on a time and stick to it. Go and do something relaxing : listen to your favourite CD or take a bath.

  • Don't over eat: Yes we do it every year; Relentlessly grazing and then wonder how we managed to pile on half a stone! Did you know that the average Christmas Dinner alone contains 25.8g fat? The recommended daily amount for Men is 95g and 70g for women. Try to stick to 3 square meals and avoid the temptation of snacking in between. If you need further convincing, then remember that in order to burn off the calories consumed on Christmas Day, you would need to walk about 30 miles...pass the Muesli please!

  • It's ok to say "No": How many of us tie ourselves in knots trying to please everyone? Keep realistic goals and don't take too much on. If you find yourself in a muddle, then delegate. Don't be afraid to admit that you are finding hard to cope and ask family members to help.

    Terrine of Vanilla Ice-Cream with Meringue and Cranberry Sauce


    Meringue
  • 2 egg whites
  • 100g (4 oz) caster sugar
    Ice-Cream
  • 100g (4 oz) granulated sugar
  • 125ml (1/4 pint) water
  • 4 egg yolks
  • 500ml (1 pint) cream
  • 1 teasp. vanilla essence
    Cranberry Sauce
  • 150 g (6 oz) cranberries
  • 100g (4 oz) sugar
  • 125ml (1/4 pt) water
  • 125ml (1/4 pt) port


    Serves 6

    Directions
    Pre-heat oven to Gas Mark 1/2 , 100°C (225°F). Line baking sheet with non-stick paper. Whisk the egg whites until stiff, add half the sugar, slowly whisking until completely dissolved, then lightly fold in the remaining sugar with a metal spoon. Pipe or spoon the mixture into small circular shapes and bake in oven for approximately 1½ hours to dry without colouring. Cool and store, until required, in an airtight container.

    Make up Cranberry Sauce: Combine cranberries, sugar and water and simmer until the berries are just soft, set aside to cool.

    To Assemble the Terrine: Line a loaf tin with overlapping cling film. Break up the meringues and fill the bottom of the tin. Add half of the ice-cream, then spread two tablespoons of cranberry sauce on top. Cover with remaining ice-cream. Close with overlapping clingfilm and freeze.

    To Serve: Turn the terrine onto a serving plate, remove cling film. Slice and serve with remaining cranberry sauce, which has been heated up with the port.
