There's a lack of new hotel rooms in regional cities
There is growing demand for new hotel rooms in Ireland’s secondary cities – but investors have been reluctant to back regional builds because they can’t deliver the same returns as Dublin.
With overseas visitor numbers forecast to increase 20% by 2022, tourism officials will be keen to avoid accommodation squeezes that contribute to higher room rates – which are soaring across the country - especially as Ireland’s value-for-money rating is already in decline.

France preparing additional sea ports for Irish freight traffic after Brexit
France is reorganising its sea ports to manage additional freight traffic from Ireland and segregate it from UK freight arriving after Brexit, French transport minister Elisabeth Borne has said.

Castlecomer 5km Wellie Race
1st January 2019, The Square, Castlecomer
Originally started in 1978 the Powley (an area in the hills surrounding Castlecomer) men decided, while playing cards, on St Stephen's day to run off the Christmas excess by having a race over a cross country circuit. Not being the type of men that would be caught dead in a pair of Nike's or Adidas runners, let alone actually own a pair, the most obvious footwear for this type of event was, yes you guessed it, WELLINGTONS.

Christmas pudding cheesecake
Prep: 25 mins - Cook: 5 mins
Cuts into 10 slices
Method
1. To make the base, mix the gingernuts and sugar in a large bowl and sprinkle in the flaky salt. Pour in the melted butter and mix with a wooden spoon to form a biscuit crumb-like mixture. Press into a 20cm round springform cake tin, spreading the mixture in an even layer to the corners. Chill in the fridge for 30 mins until set.
2. Put the Christmas pudding, brandy, stout and orange zest in a blender, and whizz to a purée.
3. Using an electric hand whisk, beat the cream cheese with the double cream, sugar and vanilla seeds, then fold through the purée. Spread the mixture over the biscuit base and leave to chill in the fridge overnight.
4. The next day, peel the clementines, slice into rounds and place on a baking tray. Sprinkle them with sugar, then blowtorch until caramelised and leave to cool. Release the cheesecake from the tin and arrange the clementines on top. Will keep for three days in the fridge.
